Appearance: White crystalline flakes or crystalline powder.
Properties: slightly bitter, odorless. The sublimation temperature is 168-170 °C, and it melts and decomposes at about 284 °C. The pH value is 5.5-7.0 in 10% aqueous solution, and the chemical properties are stable. There is almost no loss in food cooking and processing. Soluble in water (4.03g/100ml, 20℃), slightly soluble in hot ethanol, soluble in dilute mineral acid and alkaline solution, insoluble in cold ethanol and ether.
